It is important to remember that the DSC2 is a practical demonstration of a comprehensive experiential understanding of best practice. Videos from BASC offer examples of this but do not give you this level of competence without experience under good mentors or instructors.
One example of a Gralloch – There are other methods and some more suitable for different scenarios but not all examples found on the internet conform with best practice or hygiene standards!
Lardering – Even if you do not have access to a deer larder you must still fully understand the working and hygiene principles in order to apply them to your own working area and this may be a legal requirement if supplying venison.
